Cinnamon flavored treats

Cinnamon is one of our very favourite flavours. I love to pair the cinnamon flavour profile with drinks ( churro coffee creamer , cinnamon cold brew coffee ), desserts ( cinnamon creme caramel ), and even breads, especially breads ( cinnamon rolls , brioche cinnamon rolls , cinnamon babka , cinnamon toast , roasted blueberries and brie with cinnamon toast etc.).

I think that has a lot to do with my Sri Lankan heritage, and having grown up with Ceylon cinnamon (also known as true cinnamon) being such a fundamental part of Sri Lankan recipes .

Since we always have tortilla wraps at home and I have a habit of making flavoured tortilla chips to snack on every now and then, I went with tortilla chips to make these dessert nachos.

I loved the addition of beautiful berries and chocolate (duh!), and when I told Mr K about it, his exact words were “imagine how good those cinnamon chips would be with apple pie ” – Ding ding ding!

And just like that I knew I was going to pair these Dessert Nachos with Salted Caramel Apple Dip!

Where do I even begin? Honestly, every part of this dessert nachos recipe is addictive by itself.

Cinnamon sugar and butter toasted tortilla chips (tortilla triangles)

You can just stop at this point and you probably wouldn’t miss a thing. I’ve always been a fan of churros and these chips are just like churro chips!

I never knew tortilla chips could be this insanely addictive in any form. And they are so easy to make, it’s just unfair. I could go and on, but I won’t. Just try them yourself. You’ll know what I mean.

Fresh strawberries and raspberries

Nothing beats the flavour of fresh berries and it adds a lovely fruity component. When summer rolls around and you find yourself surrounded by fresh berries and fruit desserts , here’s a great recipe to make it even more sinfully decadent.

You can also try blueberries, apples, whatever.

Chocolate fudge sauce drizzle

Now we are entering irresistible territory here guys. A drizzle of decadent butterscotch chocolate fudge sauce or hot fudge sauce and those butter toasted cinnamon sugar tortilla chips now become positively dangerous.

Dulce de leche

The dulce de leche really takes these tortilla chips to churro town! These “Churro Chips” are an easier version of churros, with all the crunch, all the flavor, and NONE of the frying!

And finally,

Shut the front door! There’s no point resisting these bad boys anymore.

Like I said, I did make my own chocolate fudge sauce, but if you want to make it easier and you’re just too impatient to ravage that plate of dessert nachos, you can just drizzle some Nutella on top or your favouite store-bought chocolate sauce.

Salted caramel apple dip

The salted caramel dip is a caramel lover’s dream. You can opt out of the salt if you’re not into sweet and salty, but as you know that flavour contrast is one that works really well.

But to make it even better, I actually added some grated Granny Smith apples to this dip as well! So it’s sweet, salty, tart, gooey all at the same time.

It’s a rich, decadent dip and a little of it goes a long way, so if you have any leftover, just go ahead and spoon it over some on ice cream. Win – win – win.

Dessert Nachos with Salted Caramel Apple Dip

Ingredients

Salted Caramel Apple Dip

  • 150 g white sugar ¾ cup
  • 1 Granny Smith apple peeled and rubbed with lemon (to prevent it from browning)
  • 80 mL Heavy cream ⅓ cup
  • 2 tbsp butter
  • ½ tsp sea salt flakes Add less if using granulated or fine sea salt.

Cinnamon Chips

  • 6 large tortillas white corn or flour
  • 226 g Melted butter May not use all of it. (upto 8 tbsp)
  • 200 g white sugar 1 cup
  • 4 tsp ground cinnamon

To Serve

  • Your favourite chocolate fudge sauce
  • Berries Strawberries and raspberries. sliced or halved.

Instructions

Salted Caramel Apple Dip

  • In a large flat pan, sprinkle the sugar on the bottom. Heat it over medium low or medium heat (be careful not to introduce ANY liquid). 150 g white sugar
  • Grate the apple while the sugar is cooking. 1 Granny Smith apple
  • Keep an eye on the sugar, and when you start to see the sugar melting at the edges, use a spatula to gently move the melted and granulated sugar to evenly melt all the sugar. Adjust the heat to prevent the sugar caramelizing too fast.
  • When the sugar bits are melted and the caramel is turning golden brown, add the grated apple to the caramel. The caramel will hiss and there’ll be a lot of steam, so take care not to burn yourself!
  • Mix the grated apple with the caramel really well. Add the cream and butter and continue to mix until the butter has melted and the caramel lumps have almost disappeared. Add the salt at this stage. 80 mL Heavy cream, 2 tbsp butter, ½ tsp sea salt flakes
  • Let the caramel simmer for about 30 minutes, frequently stirring, until it’s nice and thick. The time will vary according to your stove top, so keep an eye on the caramel and stop cooking when the consistency is right. Set aside to cool. If the caramel is too thick, add a little bit of cream to thin it out slightly.

Cinnamon Chips

  • Preheat oven to 375°F.
  • Melt the butter, set aside. Mix half of the sugar with half of the cinnamon. (If you run out of sugar, mix the rest of the sugar and cinnamon together too). 226 g Melted butter, 200 g white sugar, 4 tsp ground cinnamon
  • Place a tortilla on a chopping board, and generously brush it with melted butter on both sides. Sprinkle the cinnamon sugar evenly on both sides. 6 large tortillas
  • Cut the tortilla into corn ship sized triangles and spread it evenly on the parchment lined baking tray. Repeat with the remaining tortillas to have a single layer of chips on the tray. Bake in batches if needed.
  • Bake 1 batch in the preheated oven for 8 minutes - the sugar obviously has to caramelize at this point. If it hasn’t then leave it in longer - if it caramelizes earlier, take it out sooner.
  • Remove from the oven and let them cool down.
  • Serve the cinnamon chips with the salted caramel apple dip AND the chocolate fudge sauce and berries. Your favourite chocolate fudge sauce, Berries
